    Two suggestions:
    (1) Crock pot. I don’t have a propane oven in our trailer, but the crock pot can do casseroles and soups well, including beans from dry which are lighter to carry. It’s nice to go hiking and come home to a finished meal.
    (2) You might also consider a solar oven. They can be assembled from two nested cardboard boxes and do very well in sunny climates. The biggest benefit is that they work with no additional energy inputs, just the sun!

Thanks for the suggestions! We actually looked into a solar oven but the one we were looking at was huge and heavy! Not ideal for life on the road. It makes sense one can be made from nested boxes though. It would be cool to be able to use the sun directly to cook dinner. Thanks!
