Staying Warm with Delicious Food on a Rainy RVing Day in Waco TX

On this Airstream Life vLog, we pack up the Airstream and move on from Walker Honey Farm our Harvest Hosts site. We had a wonderful time there and stayed into the later morning to try and wait out some of the heavier rain in the area. Even still we ended up having to drive the Airstream through some rainclouds.

We made it safe and sound to Speegleville Park on the lake in Waco TX. This is an Army Corps of Engineer park with water and electric camping spots. We are happy about the electric given how cold, damp and rainy it is!

After taking dogs for a walk we make some homemade Prok Chili Verde. We start by roasting the peppers and tomatillos in the oven before cooking the pork in the Instant Pot. It turned out delicious! Besides that, we enjoy the rest of the rainy day by playing card games and having a nice happy hour beverage. We also watch Fixer Upper in preparation for tomorrow. Tomorrow we head into Waco to check out the Magnolia Market and Silos. We are so excited so stay tuned!
